Breakfast Criminals – Anita’s Yogurt Winter Parfait Recipe Collection

We’re giving you a reason to get out of bed this winter—five reasons to be exact. Ksenia Avdulova of Breakfast Criminals recently created a collection of fabulous seasonal vegan parfaits using Anita’s yogurt! These light, healthy treats bring all the decadent flavors of your favorite desserts to the breakfast table. We know how hard it can be to stay healthy this time of year. Fill up and satisfy all your cravings! They’re quick and easy to prepare, plus, you can even take them on-the-go! What better way to start your day?

Pumpkin Coconut Parfait

*Ingredients to mix, then layer with granola

  • 1/2 cup Anita’s coconut yogurt
  • 1/2 cup pumpkin puree (or Whole Foods Pumpkin Pie Mix, then don’t add pumpkin pie spice)
  • 1/2 tspn pumpkin pie spice
  • 1 tspn maple syrup

 Recommended toppings: granola, pumpkin seeds, toasted pecans

Matcha Coconut Overnight Oats / Bircher Muesli

  •  1/2 cup quick rolled oats
  •  1/2 cup Anita’s coconut yogurt
  •  1/4 cup filtered water
  •  1/4 grated green apple
  •  1 tbs chopped walnuts
  •  1/4 tspn chopped lemon zest

Directions: Mix all ingredients well with a fork (or in a processor for a creamy consistent texture), refrigerate for at least 4 hours. Serve chilled.

Recommended toppings: chopped apple, walnuts, coconut

Superfood Coconut Tiramisu

  •  1 cup Anita’s coconut yogurt
  •  3 tbs strong brewed coffee
  •  1 tbs raw cacao (or Organic Gemini Tigernut cacao powder)
  •  1 tspn maple syrup

Recommended toppings: shredded coconut, raw cacao nibs or dark chocolate chips

Coconut PB & Jelly Parfait

  •  1 cup Anita’s coconut yogurt
  •  2 tbs peanut butter
  •  ¼ cup berry 
jam

Recommended Toppings: fresh berries, granola, walnuts

Berry Jam recipe (makes 1 cup): 10oz frozen berry mix (strawberries, blueberries, blackberries, raspberries) cooked in a pot for 15 mins. Add 1 tbs Lemon juice, 1 tbs honey. Cool and serve or refrigerate.

Cranberry Coconut Parfait

*can mix coconut yogurt with cranberry sauce and/or serve separately as layers

  •  1 cup Anita’s coconut yogurt
  •  ¼ cup cranberry sauce (cranberries, orange zest, orange juice squeeze, honey)
  •  ¼ cup granola

Recommended Toppings: toasted pecans, coconut, almond butter
