Embrace Ambition Smoothie

To celebrate Anita’s sendoff to the Tory Burch Fellowship competition next week, we have created the ultimate coconut yogurt smoothie, the #EmbraceAmbition smoothie. Architecturally inspired by Diana Yen’s strawberry rose layered smoothie –the talk of last month’s Cherry Bombe Jubilee–it incorporates tropical fruit, blue algae (great for the joints!), and plenty of protein and phytonutrients to power your ambition.

The colors of the smoothie were inspired by the Tory Burch sport collection, which Anita got to check out last week at their flagship shop on Fifth Avenue. Burch created the line to address a need she saw for women whose workout wear often spills over into the rest of their day, whether it is work or a lunch out with friends. From Vogue: “It really seemed like a change in the way women were dressing.” The trouble was, she didn’t like the look of those yoga pants, or much of anything else she found at the gym shops. “I started to think, How do we make this stuff chic again? What a lot of sports brands miss is femininity, unless it’s a garish femininity in the form of exposed body parts and neon colors. I was thinking more The Royal Tenenbaums.”  The colors and sophisticated patterns of Tory Sport definitely set the collection apart from other sportswear, and Anita wanted to incorporate that elegant yet playful energy into this recipe, and feature healthy ingredients that give you energy to make you feel great and conquer your day.

An unaddressed market need sparked the idea for our coconut yogurt, when Anita searched in vain for a nondairy yogurt without additives. And next week she will be among nine other women who all had a moment that sparked an idea for a business. And what brings them together is the ambition that drove them all to make it real. Besides the fellows program that provides mentorship and funding for women entrepreneurs, The Tory Burch Foundation’s Embrace Ambition campaign is set to destroy the taboo surrounding the use of the word “ambition”. Often, the word is used favorably to describe a man, and unfavorably to describe a woman. Now that we are ready to embrace our ambition, we want to see yours! This spring and summer we will feature yogurt recipes by some of our favorite local women chefs who are changing the way New Yorkers eat. We also want to see how yogurt has changed the way you eat. The Embrace Ambition Smoothie
(makes 2 large or 4 small smoothies)

Chia Layer:
½ cup Anita’s Yogurt
½ cup coconut water
¼ tsp vanilla extract
1 tbp agave nectar
2 tbp chia seeds

Blue Layer:
handful of ice
½ cup Anita’s Yogurt
3 oz frozen guanabana fruit pulp (available at Latin markets)
½ banana (use the remaining half in the green layer)
1 tbp frozen wild blueberries
½ tsp Blue Majik spirulina 1 tablespoon brown rice protein (or protein powder of choice)
1 tsp lemon juice
2 tbp coconut water

Green Layer:
handful of ice
½ cup Anita’s Yogurt
½ starfruit, roughly chopped (save the remaining half for styling)
½ banana
handful fresh spinach
1 tbp fresh mint leaves
½ tsp liquid chlorophyll
½ tbp agave nectar
3 tbp coconut water

For Assembly:
½ starfruit, sliced
1 teaspoon agave nectar

The day before, or at least 4 hours ahead of time, stir together the ingredients for the chia layer and chill until ready to prepare the rest of the smoothie.

Add the blue layer ingredients to a high-speed blender and blend on high until smooth. Pour the blue layer into a measuring cup or other vessel with a spout.

Rinse out the blender, then add the green layer ingredients. Blend on high until smooth.

In a small bowl, toss together the starfruit slices with the agave nectar to coat. Press the starfruit against the side of the glasses so they are fully stuck to the glass.

Spoon or gently pour in the blue smoothie about ⅓ of the way up the glass. Repeat with the white layer, and then the green layer. (It helps to spoon each layer against the sides of the glass first, for the prettiest presentation).

Substitutions:
You can replace Blue Majik with any spirulina powder, but the layer will not be blue.
If you don’t have access to guanabana or starfruit, use frozen peach slices instead, or young coconut meat.
