Orange zest is one of our favorite ingredients. Folded into cake batter, it adds a barely detectable bright note that perfectly compliments vanilla. Sprinkle some orange zest over carrots before roasting them to balance their earthy richness. This smoothie gives you a more immediate fix and a welcome dose of sunshine.
serves 1 (makes 1 1/2 cups)
1ea orange, zested & peeled
3/4 cup Anita’s coconut yogurt, divided
1 tsp maple syrup, divided
1ea vanilla bean, scraped, divided
Add the orange, 1/4 cup yogurt, 1/2 teaspoon maple syrup, and 1/2 the vanilla bean seeds to a blender and blend until smooth. Pour into a small vessel with a spout or a bowl.
Add the remaining 1/2 cup yogurt, 1/2 teaspoon maple syrup, orange zest, and vanilla bean seeds to the blender and blend until smooth. Alternate layers of the yogurt smoothie and the orange smoothie into a glass and enjoy immediately.
